Storing - Keeping avocados from turning brown:
Cutting or slicing into an avocado breaks down the cellular walls of the fruit causing air to enter. As a result, this oxidization process causes fruit to discolor.
Adding an acidic ingredient to the avocado such as lemon, lime, orange or vinegar can help prevent this oxidization process and keep cut avocado for longer.
Refrigeration -
Ripe fruit can be stored in the refrigerator uncut for two to three days. To store cut fruit, sprinkle it with lemon or lime juice or white vinegar and place in an air-tight container in your refrigerator. Clear plastic wrap can also be substituted for an air-tight container. If refrigerated guacamole turns brown during storage, discard the top layer.
Freezing -
When you have an abundance of fresh avocados, consider freezing them. Pureed avocados freeze very well and can be used in salads, sandwiches and dips.
Please note: We do not recommend freezing pre-made guacamole, whole, sliced or halved avocados as they can have a less desirable result.
